Meat,by nature,is not shelf-stable and is very susceptible to spoilage.Food manufacturers and processors have for many years searched ways to further increase shelf life of meat or meat products.Today,many leaders in the meat industry are able to distribute meat in vacuum shrink bags under stringent hygiene and chilled conditions and achieve long shelf life.
