摘要
间苯酚法一般用酮糖和醛糖的定性鉴别。已糖与盐酸共热脱水。生成的羟甲基糖醛与间苯二酚结合成鲜红色化合物。当酮糖基本反应完全时,醛糖仅有千分之几反应。通过间苯二酚用量实验可看出间苯二酚与糖量之比等于1:1时吸光度基本不变。这说明当果糖反应完全后。葡萄糖还很少反应。利用二者的反应速度悬殊,在控制一定反应条件下。可以定量测定果糖。根据上述原理测定了由葡萄糖异构酶产生菌的菌丝体和固定化异构酶所转化的果葡糖浆中果糖含量。并测定了链霉菌发酵液中葡萄糖异构酶的活性。
This paper reported that fructose contained in HFCS is determined by resorcinol-spectrophotometric method. The reaction conditions, colour developing rate and stability are studied. The suitable conditions, that the fructose contained in HFCS is determined quantitatively, are obtained. The activity of glucose isomerase is also determined by this method. The results obtained are satisfying. In practice, it is a simple and rapid method.
