摘要
过去二十年内,人们逐渐认识到超氧歧化酶(SOD)对存在于生命体系中超氧游离基有抑制作用方面起着极其重要的意义。近年来,对收获和屠宰后食物中超氧歧化酶的存在,作用以及作为天然抗氧化剂的重要性也已经进行了研究。本文回顾了食品中超氧歧化酶的重要性。
In last twenty years, it has been known gradually that SOD is important in inhibition to superoxide free radical of life system. Recently, the existance of SOD in harvested and slaughtered food, effect and its importance as natural antioxidant have been studied as well. The importance of SOD in food has been reviewed in this paper.
