摘要
如何鉴别大米在储藏过程中品质劣变的程度 ,一直是人们力争解决而又未能圆满解决的问题。本文提出了光透差这一新概念。实验证明 ,光透差作为评价大米因生霉或陈化引起的品质劣变的主要指标 ,是可行的。该方法适应性好 ,灵敏度较传统指标高 ,方法简单。同时 。
Light transparency difference as primary index of evaluating stored rice quality was proposed,and this method is simple,feasible,good adaptability and high sensitivity.The factors which affect the measurement of light transparency difference was also probed.
