摘要
目的 :研究α 淀粉酶抑制剂 (α AI)的特性及其分布规律。方法 :多种高淀粉植物果实通过选择性热变性、离子交换层析、亲和层析等分离提纯α 淀粉酶 (EC ,3.2 .1.1)的抑制剂 ,并对抑制剂的含量进行分析。结果与结论 :经透析确认α AI主要成分为蛋白 ,其含量分布的规律是与淀粉的含量成正相关 :Y∧ =3.90 +0 .43X ,r=0 .93,P <0 .0 1,认为这是植物进行自我保护的一种高度生存适应形式。
Objective: To investigate characteristics and distribution of α-amylase inhibitor(α-AI).Methods: α-AI in many kinds of high-starch fruits was purified by selective thermal denaturation,ionic exchange and affinity chromatography,and a study was made on its basic characteristics and content as well.Results and Conclusion: Its dialysis indicated α-AI is mainly composed of protein,and its distribution is in the positive correlation with the content of starch:Y[DD(-0.35mm]∧=3.90+0.43X,r=0.93,P<0.01,which is considered a self-defense of plants.
