30家餐饮业卫生状况调查分析

Investigation of Hygienic Status among 30 Catering Trades

摘要 目的 :为了解我省餐饮业卫生状况 ,针对性制定管理对策。方法 :采取随机抽样的方法选取合肥市30家餐饮业进行了卫生学调查。结果 :大型餐饮业卫生管理组织和制度健全 ,有较完善的基础卫生设施 ,餐具消毒合格率高 (88.9% ) ,中、小型餐饮业卫生问题较多 ,是餐饮业卫生管理的薄弱环节。结论 :今后应加强对餐饮业的卫生监督与管理。 In order to investigate hygienic status of catering trades in Anhui province and to provide proofs for making countermeasures, 30 catering trades in Hefei were randomly sampled and investigated with hygienic method. The results showed that large catering trades had perfect equipment and sanitation management. The dietetic utensils sterilization had a higher qualified rate (88.9%). But there were many sanitary problems at middle and small catering trades. Sanitary inspection and control for catering trades should be strengthened in future, especially for middle and small catering trades.
