信阳地区蕨菜的营养成分分析

信阳地处山区 ,山野菜种类繁多、资源丰富。因其很高的营养价值 ,无污染的优越性 ,受到人们的青睐 ,其开发前景十分广阔。为对山野菜———蕨菜的开发利用提供充分的依据 ,我们对其营养成分进行了分析测定 ,结果表明 :粗水分为 89 1% ,干制品粗蛋白为 2 4 6 2 %、纯蛋白为 4 6 1%、粗纤维含量为 15 1% ,除此还含有钙、磷、铁、胡萝卜。

The writer of this paper has analysed the nutritional element of Fiddlehead and the result of the study utiliaztion of Fiddlehead.
