摘要 一年生禾本科植物高粱(SorghumVulgarePers)外果皮提取、纯化、精制的高粱色素为深褐色粉末。易溶于水及乙醇水溶液;不溶于非极性溶剂。色素水溶液红棕透明,对热和光等稳定性很高。并研究了与核色素色调相匹配的吸收峰、颜色反应、不同pH条件下的色调及色度、纸上色谱分析等。两个主要着色成分均为黄酮类化合物,初步认为是5,7,4’-三羟基黄酮和5,3’,4’-三羟基黄酮-7-葡萄糖苷。 Epicarps of annual graminaceous plant Chinese sorghum(Sorghum vulgarePers)were extracted and purified in the present study.The highly finished sorghum pigment isdark brown powder,which is soluble in water and ethanol easily,but not in non-polar sol-vents,It appears red brown and transparent in the solution,and is stable to heat andsuulight.Also,the absorption peak matched with the pigment tone,the colour reaction,thetone and chromaticness under different pH and paper chromatogrdphy were studied. The re-sults indicated that the two main colour components were considered flavonoid,suggestingtentatively that they are apigenin and quercitrin.
