黑果枸杞果实总花色苷含量达386.9mg/100g(鲜重),主要有三个组分,两种属锦葵糖昔,一个是黄酮类化合物。花色昔在紫外区230和300nm处各有一明显吸收峰,表明有酰化结构,所以该果汁色素有较高的稳定性。详细结构待深入研究。
The content of pigments in fruits of Lycium ruthenicum Murr.were deter-mined.The tolal anthocyanin content was 386.9mg/100g(fresh wt).The pigment patterns foundwere mainly malvin and flavonoid.Two distinct peaks appeared sepalately at 230 nm and 300nm in the ultraviolet region of anthocyanin absorption spectra.The acylated structure occuredin these anthocyanins indicate the high stability of the pigments.
