摘要
对女贞果红色素的提取及性质进行了研究。结果表明,该色素为水溶性色素,对光、热稳定性较好.葡萄糖、蔗糖、食盐、柠檬酸等对女贞果红色素有增色作用.
The essay studied the extraction of red pigment from the fruits of glossy privet and its physicochemical properties. The results showed that the pigmentis stable to heat and light. The glucose, sucrose, common salt and citric acid have thefunction of colour increase.
