摘要 本文介绍低聚木糖的组成和与食品加工有关的理化性质和生理学特性,确立了玉米芯经稀酸预处理后加水蒸煮提取木聚糖,然后再加酶水解提取液的低聚木糖的生产工艺路线.玉米芯经 0.1% H _2SO_4在 60C条件下浸泡 12 h,滤去浸泡液并用水洗至pH6左右,然后进行湿法或干法蒸煮.在优化的条件下,湿法蒸煮和于法蒸煮提取液连渣一起加酶水解的累计可溶性总糖得率可分别达到74.0%和67.7%(对原料木聚糖),水解液低聚木糖有效物含量达到70%以上. The component and physicochemical physiological properties of xylooligosaccharides were presented. A process of producing xylooligosacchrides from corncob consisted of pretreatment with diluted acid and steaming and enzymatic hydrolysis was conceived and tested. Corncob was pretreated by 0.1% H_2SO_4 at 60 C for 12 hours, followed by filtration and washing with tap water to about pH6, then cooked or steamed to extract xylan. The yield of the xylooligosaccharides by enzymatic hydrolysis with the cooking or steaming could be up to 74.0% and 67.7% (based on xylan in raw material) respectively. The purity of xylooligosaccharides was above 70%.
