赤藓醇是一种发酵法制取的食用糖醇.由于它的热值只有食糖的10%,且耐受性好,因而受到食品加工者的欢迎.近年在欧洲和日本十分流行,本文着重介绍了欧洲用赤藓醇制备的几种赤藓醇糖果的配方和工艺.
Erythritol is an edible sugar alcohol produced by fermentation method. With its calorie value of as low as 10% of sugar and its good heat tolerance, it is a preferred choice by food manufacturers. This product is very popular in Europe and Japan in recent years. This article highlighted formulas and techology of several erythritol candies in Europe.
