摘要 姜黄素类物质是姜黄中含有的一类黄色色素,最近研究表明,它具有很强的抗癌、抗氧化、抑制酪氨酸酶等生理功能,其中它的抗氧化机制主要是捕获自由基后,形成一种稳定的具有二氧呋喃结构的二聚体初期产物,该二聚体在姜黄素的抗氧化过程中起着重要的作用. The curcumin is a kind of yellow color contained in Curcuma longa L. Recent studies have shown that it has very strong anti-carcinogenic and antioxidant and anti-tyrosinase activities. Its antioxidant mechanism is as follows: on the trapping stage it traps free radicals, then a stable dimer bearing a dihydrofuran structure is formated. This dimer plays an important role in curcumin's antioxidant activity.
