摘要
研究了辐射处理和低温充气包装 (MAP)对毛竹笋贮藏性能的影响。结果表明 ,毛竹笋不耐辐射 ,辐射剂量越大 ,则越显不耐贮藏。而在毛竹笋中应用 MAP技术则可以显示出比较明显的保鲜效果 ,用保鲜纸包裹后包装于充气条件为 CO2 2 % ,O2 5 % ,N2 93%聚乙烯薄膜袋中的毛竹笋 ,在 4℃左右的低温下贮藏 ,6 0天仍能保持良好的内在品质。
Effects of nuclear radiation and MAP under low temperature on the properties of the bamboo shoots of phyllostachys pubescens were studied. The results indicated that bamboo shoots couldn't resist nuclear radiation well; the higher the dose was used, the shorter storage life bamboo shoots showed. A certain preserving function was showed when bamboo shoots stored under the conditions of MAP and low temperature. Packed with compound paper and modified atmosphere with carbon dioxide 2%, oxygen 5%, and nitrogen 93%, bamboo shoots in PE bag can keep fresh for 60 days at temperature 4℃ or so.
