摘要
目前我国大豆深加工的技术和设备与发达国家相比仍存在一定差距,其结果使得大豆产品结构单一。如何引进高新技术开发大豆新产品,提高大豆附加值,已是国内食品企业人世后必须思考的问题。本文从大豆功能性成分之一大豆异黄酮入手,着重分析了其分子结构、含量、生物活性及目前国内外市场现状,希望能为国内食品企业投资相关产业提供一定参考。
We' re behind of the developed country in soybean deep processing for some technical and equipment reasons! which result in the singleness of soy products.So it's necessary for national food enterprise to develop new high-value soy products after china's entry to the WTO. This article mainly discuss the structure,contents,bioactivities and market at home and abroad of soybean isoflavones.
