本文研究了酸碱度、光和热对水溶性红曲色素性质的影响,其实验结果为水溶性组曲色素的开发和应用提供了科学的依据。
The effect of pH, light & heat on properties of water soluble monascus pigment was studied. The experiment result provided scientific basis for the development and use of water soluble monascus pigment.
