摘要
本文研究了紫苏色素的热稳定性、光稳定性、pH值、金属离子和氧化还原剂对紫苏色素稳定性的影响．实验结果表明，紫苏色素对光、热都较稳定，在pH为3－4的范围内，紫苏色素降解缓慢，除Cu2+、Fe3+外，大多数金届离子对其影响很小，氧化还原剂对色素有破坏作用．
The effects of light, heat, pH and metal ions on the stability of Perilla colorwere studied. The Perilla color is stable at low tetnperature - At pH=2-4 the Perilla color isstable. Most metal ions do not influence the stability of Perill color.
