牛磺酸对烹调油烟凝聚物引起谷胱甘肽过氧化物酶改变的保护作用 被引量:3

摘要 目的 :本文研究了烹调油烟凝聚物 ( ROFC)对谷胱甘肽过氧化物酶 ( GSH- Px)的影响以及牛磺酸对其的保护作用。方法 :4 2只小鼠分为 7组 ,其中 3组以 60 %、3 0 %、15 %的油烟冷凝物对小鼠进行灌胃染毒 ,另 3组分别在相同剂量油烟凝聚物灌胃染毒的同时在饮水中给予 2 %牛磺酸保护 ,连续 1周 ,观察其血液中 GSH - Px活性变化及牛磺酸对其的保护作用。另一组为对照组。结果 :ROFC染毒组随染毒剂量的增加 ,GSH- Px活力逐渐降低 ( P<0 .0 1) ,呈现负相关关系。加牛磺酸保护后 ,与相应 ROFC染毒组比较 ,GSH- Px活性均有上升趋势 ,但并无统计学差异。结论 :油烟凝聚物能降低体内 GSH- Px的水平 ,牛磺酸对此可能具有一定的保护作用 。 The effects of rape oil fume condensate (ROFC) on glutathione peroxidase (GSH-Px) and the protective effect of taurine were studied. 42 mice were divided into 7 groups with each of 6 mice. 3 of ROFC exposure groups were infused with different concentration of 60%, 30%, 15% ROFC into stomach for 1 week, respectively (1 time/day). 3 of taurine protect groups were poisoned by ROFC just like exposure groups and given 2%taurine in tab water during the all period of exposure. The activity of whole blood GSH-Px in mice was detected at the end of exposure. The results showed that ROFC can decrease the activity of GSH-Px with a does-dependent manner (P<0.01). A trend was found that tautine can increase the activity of GSH-Px, but it has no statistic significance (P>0.05)
