摘要
以Alcalase碱性蛋白酶对玉米皮进行水解,制取玉米蛋白水解液.结果,该酶水解的最佳工艺条件为:在浓度5%的玉米皮中加2.67%酶制剂,pH7.5,55℃反应1h.该工艺条件下制得的蛋白水解液中,蛋白质溶出率为89.3%.水解度为9.0%.
A kind of corn bran protein hydrolysis liquid was produced from corn bran, hydrolyzed with Alcalase. The technological process and main points were studied. Results indicate that the best combination of parameters for Alcalase is 55℃, ph7.5,5% substrate,2.67% enzyme and 1h. In such conditions 89.3% of the protein in corn bran was hydrolyzed. DH was 9.0%.
