摘要
运用体外模拟消化模型研究漂烫和干制复水处理对海带中Pb、Cd、Se、Zn四种元素浓度和生物利用度的影响。采用ICP-MS进行分析。结果表明,海带中的Zn和Cd经过两种热处理后,其浓度均显著高于原料(p <0.05);而Pb正好相反,两种加工处理均降低其浓度。加工前后海带中Pb、Cd、Se、Zn的生物利用度分别为39.28%~105.88%、34.88%~55.32%、86.24%~97.67%和59.35%~98.76%,其中Pb和Cd的生物利用度经过两种加工处理后均降低,而Zn的生物利用度经过加工后升高。两种加工方式相比,干制复水处理后四种元素的生物利用度基本高于漂烫处理。除了Cd和Zn的生物利用度,四种元素浓度、生物利用度以及浓度和生物利用度之间都存在显著相关性(p <0.05)。因此海带中四种元素的吸收利用与加工方式密切相关。
An in-vitro digestion method was used to investigate the effect of boiling and dried-rehydration treatments on total concentration and bioaccessibility of four elements( Pb,Cd,Se,Zn) in seaweed. Contents were determined by ICP-MS. The contents of Zn and Cd in two thermal treatments samples were significantly higher than those in the raw seaweed( p < 0.05),while Pb had the opposite trends.The bioaccessibility of Pb,Cd,Se,Zn were 39.28% ~105.88%,34.88% ~55.32%,86.24% ~97.67% and 59.35% ~98.76% before and after cooking,respectively.The bioaccessibility of Pb and Cd decreased in seaweed cooked by both thermal processes. While the bioaccessibility of Zn increased after cooking. By contrast,the bioaccessibility of four metals treated by dried-rehydration were basically higher than those by boiling treatment. A significant correlation was observed between the concentration and bioaccessibility of elements except the bioaccessibility of Cd and Zn( p < 0.05). The utilization of four elements in seaweed was closely related to the thermal processes.
