聚赖氨酸复合涂膜协同气调包装对金鲳鱼保鲜作用研究 被引量:16

Combined preservation effects of polylysine composite coating with modified atmospheric packaging on Trachinotus ovatus

摘要 以聚赖氨酸(?-PL)与海藻酸钠复合成膜,研究复合涂膜协同气调包装对金鲳鱼冷藏保鲜作用。通过菌落总数、色泽、p H、水分含量、硫代巴比妥酸(thiobarbituric acid,TBA)值、挥发性盐基氮值(total volatile basic nitrogen,TVB-N)变化,分析金鲳鱼冷藏期间品质的变化。结果表明:经ε-PL复合涂膜的金鲳鱼冷藏9 d后,菌落总数为5.34 lg(CFU/g),TVB-N和TBA值分别为12.42mg/100 g和0.422 mg/100 g,属于一级鲜度。未经涂膜处理组样品在冷藏5 d后出现腐败现象,菌落总数和TVB-N值分达7.54 lg(CFU/g)和13.65 mg/100 g,TBA值达0.969 mg/100 g。可见,ε-PL复合涂膜协同气调包装能有效抑制冷藏金鲳鱼中微生物生长,维持良好的品质,可将金鲳鱼冷藏期延长至9 d以上。 In order to study the synergistic effects of polylysine(?-PL) composite coating with modified atmospheric packaging(MAP) on the Trachinotus ovatus, sodium alginate used as a film carrier. The total viable count, color, pH, moisture content, total volatile basic nitrogen(TVB-N) value, thiobarbituric acid(TBA) value were measured respectively to analyze the quality of samples during cold storage. The results showed that: when samples were stored for 9 days at refrigerator temperature with ?-PL composite coating, the total bacterial counts was 5.34 lg(CFU/g), TVB-N value was 12.42 mg/100 g and the TBA was 0.422 mg/100 g which was the first class freshness. While the control samples without coating were getting to corrupt after 5 days, the total bacterial counts and TVB-N value were 7.54 lg(CFU/g) and 13.65 mg/100 g, TBA was 0.969 mg/100 g. Therefore, the ?-PL coating combined with MAP was effective in limiting the growth of microorganism and keeping the quality of fresh Trachinotus ovatus. It could keep the shelf life of fresh fish at least for 9 days.
