摘要
研究马齿苋不同溶剂提取物对核桃油的抗氧化作用,以过氧化值为评价指标,比较马齿苋不同溶剂提取物对核桃油的抗氧化作用。在(50±1)℃恒温8 d,不同溶剂提取物最佳添加量下对核桃油的抗氧化活性由强到弱的次序是:0.02%多糖>0.01%多糖>0.01%水提物>0.01%丙酮提取物>0.02%水提物>0.03%水提物,均大于0.02%VE。8 d后添加量为0.02%的多糖对核桃油的抗氧化性最好,其核桃油的POV值为0.822 mmol/kg,是空白值的15.9%;添加0.02%VE的POV值为1.071mmol/kg,是空白值的20.7%;添加量为0.03%醇提物的抗氧化性最差,此时其POV值为3.794 mmol/kg,是空白值的86.5%。马齿苋不同溶剂提取物对核桃油都具有良好的抗氧化性,对油脂氧化抑制效果显著。
Antioxidant effects of different solvent extracts of Portulaca Oleracea L.on walnut oil were studied, and the value of peroxidation was evaluated.Under the (50+1)℃ constant temperature for 8 days,the best additive amount of different solvent extracts on the antioxidant activity of walnut oil from strong to weak order was :0.02% polysaccharide >0.01% polysaccharide >0.01% water extract >0.01% acetone extract >0.02% and 0.03% of water extract,all of which were greater than 0.02% vitamin E.8 days later,0.02% of the polysaccharides had the best antioxidant activity in walnut oil,the walnut oil of POV was 0.822 mmol/kg,was 15.9% of the blank value. Adding 0.02% VE of walnut oil POV was 1.071 mmol/kg,which was the blank value of 20.7%.Adding amount was 0.03% alcohol provided the antioxidant of the worst,at this time the POV for 3.794 mmol/kg,was the blank value of 86.5%.The different solvent extracts of Portulaca Oleracea had excellent'antioxidation effects on walnut oil.
