陶融型大曲作为陶融型白酒的糖化发酵剂,在酿酒生产中起着关键的作用。影响陶融型大曲质量的因素较多,从原料验收,到润料、粉碎、压制曲胚、入房培养等每一个环节都较为重要,稍有闪失就会出现质量问题。重点对陶融型大曲几类质量问题进行分析与探讨。从而提高大曲质量,降低能源消耗。

As a saccharification ferment starter of pottery-flavor liquor, pottery-flavor Daqu play a key role in liquor production. There are many factors that effect the quality of pottery-flavor daqu, from the acceptance of raw materials to wetting, crushing, starter-making and entering the house culture, etc. Every link is more important. There will be quality problems if have a slight slip. This paper focuses on the analysis and discussion of several kinds of quality problems of pottery-flavor Daqu. In order to improve the quality of Daqu and reduce energy consumption.
