研究中式烹饪鲜汤上浆挂糊及勾芡技术 被引量:1

摘要 上浆挂糊以及勾芡技术是食堂中常用的烹饪技术之一,其大大提高了食品的加工质量,是一种非常受欢迎的烹饪技术。在保证口味和口感的同时,充分保证食物的营养也极为重要。文章着重阐述了上浆挂糊与勾芡技术的原理、使用的注意事项等方面的内容。
