摘要
通过雾化能够将益生菌包埋液分散为小尺寸的雾滴,这有利于后续的包埋操作。本文主要介绍了七种以雾化方式为基础的益生菌包埋技术:喷雾干燥技术、两段式干燥技术、喷雾冷冻技术、超声波真空喷雾干燥技术、喷雾冷冻干燥技术、静电纺丝技术、雾滴撞击技术,并对这七种技术的操作原理和包埋效果进行了综述,旨在为益生菌雾化包埋技术的完善提供理论基础和依据。
Through atomization,the probiotics entrapped liquid could be scattered into fogdrop with small size, which was beneficial to subsequent microencapsulation process.This paper mainly introduced seven kinds of probiotic microencapsulation techniques based on atomization:spray drying,two-step drying,spray chilling,spray freeze drying,ultrasonic vacuum spray drying,impinging aerosol,electrospinningand reviewed the operational principle and microencapsulation efficiency of these mieroencapsulation techniques,providing theoretical basis for perfecting probiotic microencapsulation technique.
