摘要
板栗具有丰富的营养价值和药用价值。对近年来板栗的精深加工技术和综合利用的研究成果进行综述,包括板栗粉、板栗果脯、板栗保健饮料、板栗酒、板栗脆片、板栗面包等精深加工技术以及板栗壳、板栗花、栗苞等副产物的综合利用,以期为板栗深加工产品的市场化开发提供理论依据。
Chestnut has rich nutrition and medicinal value. The research results of the deep processing technology and comprehensive utilization of chestnut in recent years were reviewed, including the deep processing technology of chestnut powder, chestnut preserved fruit, chestnut health beverage, chestnut wine, chestnut chip and chestnut bread, as well as the comprehensive utilization of the by-products such as chestnut shell, chestnut flower and chestnut bud. The study provides a theoretical basis for the market development of deep processing products of chestnut.
