摘要
以黑粒小麦麸皮为原料,对其功能性成分及抗氧化活性进行分析。研究结果表明,黑粒小麦麸皮中含有丰富的黄酮、多酚和色素类物质,其中总黄酮含量为(0.514±0.026)mg/g,总多酚含量为(2.503±0.019)mg/g,总花色苷含量为(0.154±0.015)mg/g。黑粒小麦麸皮的乙醇-水提取物具有较好的抗氧化活性,DPPH·清除率为(88.23±1.44)%,总抗氧化能力为(40.49±0.016)单位/m L。
The black wheat bran was investigated on its functional components and antioxidant activity. The results showed that the black wheat bran is rich in flavonoids,polyphenols and anthocyanins.The contents of total flavonoids is (0.514±0.026)mg/g,the content of total polyphenol is (2.503±0.019)mg/g, and the content of total anthocyanin is (0.154±0.015)mg/g.The extract of the black wheat bran by ethanol and water has good antioxidant capacity,the scavenging free radical of DPPH capacity is (88.23±1.44)%, and the total antioxidant capacity is (40.49±0.016)Unit/mL.
