Pork was taken as the main raw material,and black rice,corn starch,soy protein isolate and carrageenan were taken as auxiliary materials.The processing technology and formula of traditional ham sausage products were improved,and elastic ham sausage with black rice was made.Elastic ham sausage with black rice could meet the quality standard requirements of ham sausage,and it could enrich the variety of meat products market.
