摘要 内蒙古锡林郭勒草原牛、羊肉产业化发展历史悠久,发展速度较快,肉品鲜美,倍受国内外消费者的青睐。针对锡林郭勒草原牛、羊不同部位肉中的蛋白质、脂肪、水分、灰分及部分矿物质元素进行分析,牛、羊肉蛋白质含量高,分别是22. 00g/100g和18. 90g/100g;脂肪含量低,分别是5. 67g/100g和10. 73g/100g;同时微量元素含量也丰富,Ca、P、Fe、Zn、Se含量也较高。可以看出锡林郭勒草原牛羊肉营养价值高,为推广锡林郭勒牛、羊肉提供依据。 The industrialization of beef and mutton in xilingol grassland in inner mongolia had a long history. The development speed was fast, and the meat was delicious, and it was popular among consumers at home and abroad. Protein, fat, water, ash and some mineral elements in different parts of beef and mutton in xilingol grassland were analyzed. The protein content of beef and mutton was high , and they were 22. 00 g/100g and 18. 90 g/100g respectively. The fat content was low, and they were 5. 67 g/100g and 10.73 g/100g respectively. At the same time, the content of trace elements was rich, and the content of Ca,P,Fe, Zn and Se were high. It could be seen that the nutritional value of beef and mutton in xilingol grassland was high. This provided a basis for the promotion of beef and mutton in xilingol grassland.
