2018年天津铁路辖区食品安全考核分析

Analysis on food safety assessment of Tianjin railway area in 2018

目的为了更好地分析天津铁路食品安全现状。方法采取普查的方法对辖区内24家单位进行了打分考核,同时对食品经营单位、食堂、伙食团扣分较多的项目进行了统计分析。结果2018年与2017年总平均分差异无统计学意义(P>0.05);其中食品经营单位管理扣分较多的原因为食品安全管理制度完善问题、风险问题库运用问题、管理档案齐全度差;食堂食品安全考核扣分较多的原因为地漏孔径不合格、食品安全承诺书问题、食品加工分区问题;伙食团食品安全考核扣分较多的原因为食品加工工具标记问题、水池问题、灭蝇设施问题、卫生记录问题。结论天津辖区食品安全工作总体平稳,各单位食品安全管理水平相差不大;食品经营单位、食堂、伙食团等安全问题尚需进一步加强监督。

Objective To better analyze the present situation of food safety in Tianjin railway. Methods 24 units in the area were evaluated by means of census. At the same time,the paper makes statistical analysis of the items with more points for food management units,canteens and catering groups. Results There was no significant difference in the total average score between 2018 and 2017(P>0.05). Among them,the reasons for the more deduction of food management units were the improvement of food safety management system,the use of risk problem libraries,and the poor degree of management files;The reasons for the more deductive points in the canteen were the unqualified aperture of the ground leakage,the issue of food safety commitment,and the problem of food processing zoning;The reasons for the more deductive points in the food group were the problem of food processing tools marking,the problem of water pools,the problem of antifly facilities,and the problem of health records. Conclusion The food safety work in Tianjin is generally stable,and the level of food safety management in different units is not very different. Safety issues such as food management units,canteens and food groups need to be further strengthened.
