摘要
本实验对邻菲罗啉比色法测定啤酒和麦汁中铁离子的条件进行了探索。通过对最大吸收波长、样品处理方法、还原剂添加量、显色时间、保温温度等因素进行了试验,确定出最优检测条件:最大吸收波长510nm、还原剂用量1.OmL,检测麦汁时,先将样品处理后水浴煮沸30min,再使用不含铁的定量滤纸过滤后检测;而啤酒不需要水浴,显色15min后直接测定。试验结果表明:该法在检测啤酒与麦汁样品时具有操作简便、显色稳定、回收率高等特点。
This experiment is mainly to erplore the conditions of using phenanthroline colorimetry to detect iron irons in beer and wort.After testing the below facors:the maximum absorption wavelength,sample handling methods,additive amount of reducing agent,chromogenic time,holding temperature etc.We confirmed the following conditions of this methods.The maximum absorption wavelength is 510nm,and the reducing agent dosage is 1.0mL. Boil in water bath for 30 minutes after the sample handing when testing with wort,then detect after filtration with iron-free quantitative filter paper.But when testing with beer,no need of water bath,directly detect after ehromogenic for 15 minutes.The test result shows that phenanthroline colorimetry is simple to operate,and has a stable chromogenic reaction,and also a high recovery rate while detecting iron irons in beer and wort.
