鹿角海萝营养成分的分析

Analysis of the nutrient component in Gloiopeltis tenax

对采自大连獐子岛海域的鹿角海萝中的营养成分(主要包括蛋白质、游离氨基酸、粗脂肪、多糖、多酚、粗纤维、无机元素、水分、灰分等)进行了测定,并与几种常见的大型海藻进行比较,综合评价鹿角海萝的营养价值。结果表明,鹿角海萝干品中各成分的质量分数分别为:蛋白质24.43%,粗脂肪0.03%,多糖42.20%,纤维素5.72%,灰分26.29%,多酚0.03%。鹿角海萝干品共检测出16种游离氨基酸,这16种游离氨基酸占鹿角海萝质量分数总计为0.21%,其中必需氨基酸占鹿角海萝的0.06%。此外,鹿角海萝中还富含钙、铁、锌等无机元素。

The nutrient components fromGloiopeltis tenaxcollected in Zhangzidao sea area were studied,such as protein,free amino acids,crude fat,polysaccharides,polyphenol,crude fibre,inorganic elements,water and ash.The nutrient value was evaluated compared with other common seaweeds.The content of protein was24.43%,the crude fat content was 0.03%,the polysaccharide content was 42.20%,The crude fibre content was5.72%,the ash content was 26.29%,the polyphenol content was 0.03%,16 amino acids were detected,the free amino acid content was 0.21%,and the required amino acid composition ratio was 0.06%.In addition,Gloiopeltis tenaxis also rich in calcium,iron,zinc and other inorganic elements.
