酵母单细胞蛋白固态发酵系统中氮素变化的研究 被引量:7

摘要 研究了固态发酵饲料酵母时添加非蛋白氮源 (硫酸铵、尿素 )对提高蛋白含量的影响及其整个发酵过程中氮素代谢动态变化规律 ,讨论了同化作用、转化作用、分解作用 3种氮代谢反应方式。试验结果表明 :酵母对非蛋白氮的同化能力较低 ,添加 3%硫酸铵时 ,蛋白质的真实含量可提高约 2 3% ,而添加 3%尿素仅提高 1 8%。整个发酵过程总氮量基本恒定不变。 The effect of adding some non protein nitrogen such as urea and ammonium sulfate on protein content and the changing regulations of nitrogen metabolism in solid state fermentation(SSF) was studied Nitrogen metabolism which can be further divided into three forms: unsimilation, transformation, decomposition being researched too The experiment results shows that in solid state fermentation(SSF) process, yeast′s transformation capacity for non protein nitrogen was low and total nitrogen content in the system remained when adding 3% urea, the increment of true protein content was 2 3%; while adding 3% ammonium sulfate, the increment of true protein content was 1 8% Some opinions are given for detection protein content and judge quality in fermentation feedstuff
