从“华商大餐”看淮扬菜特色 被引量:1

摘要 华商大餐是扬州市为接待第六届世界华商大会 180 0名来扬代表而精心制作的盛大午宴 ,又称淮扬秋瑞宴。根据其菜单和相应的操作要求 ,结合淮扬菜的其它品种 ,可以看出 ,淮扬菜在宴席类型与命名、菜点品种与用料、菜点色彩与成形、菜点烹法与口味、菜点质感与上菜程序等方面颇有地方特色 。 Grand Banquet for Foreign Businessmen of Chinese Origin' was elaborately prepared by the City of Yangzhou for receiving the representatives attending the Sixth World Convention of Foreign Businessmen of Chinese Origin and coming to Yangzhou during the meeting. The banquet is also called Qiurui( auspicious Autumn) Banquet. According to its menu and corresponding cooking requirements, in combination with other kinds of Huaiyang Style dishes, it is obvious that Huaiyang style dishes have their own local features in the aspects of the banquet type and dish names, dish variety and ingredients, dish colors and shapes, dish cooking methods and dish tastes, dish quality and serving procedures and so on, which display the rich connotations and attractive charm of Huaiyang diet culture to the full.
