摘要
采用三因素二次旋转正交回归设计 ,研究胰蛋白酶水解螺旋藻蛋白质时pH值、温度 (T)、酶 -底物浓度比 (E/S)等三个因素及二因素交互作用对水解质蛋白收率的影响 ,并建立了水解回归模型。确定最优水解条件为 :pH值为 8、温度为 40℃、E/S为 0 7%。
The enzymatic hydrolysis of spirulina protein by trypsin was systematically studied through the quadratic rotary combination design.The effect of pH,temperature and enzyme-substrate concentration ratio on the yield of hydrolyzed proteins was studied.The enzyme-substrate,F-test was used to verify the model.The optimum hydrolytic conditions were as follows:pH was 8,temperature was 40 ℃,enzyme-substrate concentration was 0.7%.
