摘要
对卵清白蛋白的最佳水解条件及水解液的应用进行了研究。结果表明 :底物浓度5%、酶用量 50 0 0 μ/ g底物、反应温度 50℃、反应初始 pH 5 0时 ,Flavourzyme对卵清白蛋白的水解度达 55 1 % 。
The optimal enzyme hydrolysis condition of egg white albumin and the application of the hydrolyte were studied.The result showed:the hydrolytic degree of egg white albumin was up to 55.1% at the substrate concentration 5%,the ratio of enzyme to substrate concentration 5000 μ/g, temperature 50℃,initial pH5.0.A rich amino acids albumin nutriment might be obtained from this hydrolyte
