综述了微生物原果胶酶的作用机理 ,酶学性质 ,分子生物学基础 ,并对微生物原果胶酶的应用作了介绍。
The reaction mechanism, characteristics and molecular biology of protopectinases were described. In addition, the application of such enzyme was also introduced.
