新疆地产苦杏仁及油的营养成分研究

Research on Nutrition Components of Oil and Semen Armeniacae Amarum of Xinjiang

为进一步研究和开发苦杏仁资源 ,采用常规及仪器分析方法对苦杏仁及油的主要营养成分、氨基酸组成、微量元素、脂肪酸组成和理化指标进行了分析测定。经测定苦杏仁含脂肪5 0 8% ,脂肪中含六种脂肪酸 ,其中不饱和脂肪酸含量高达 90 % ;蛋白质 2 3 7% ,水分 3 13% ,总糖3 97% ,维生素E 0 0 0 5 12 % ,氨基酸总量 2 1 32 % ,并含有多种微量元素 ;折光率 1 4 6 72 ,比重0 90 0 2 ,碘值 111 13,皂化值 191 4 3。测定结果表明 ,苦杏仁含有多种营养成分和活性物质 ,是一种理想的天然保健食品和药物 ,具有较好的开发利用前景。

In order to promote the research and exploit of Semen Armeniacae Amarum resource,this paper analyses the main nutritional ingredients and physico chemical parameters of oil and Semen Armeniacae Amarum with routine analysis methods and instruments.The Semen Armeniacae Amarum contains 50.8% fat having six kinds of fatty acid,in which the content of unsaturated fatty acid is over 90%,23.7% protein,3.13% moisture,3.97% carbohydrate, 0.00512% vitamin E and trace elements.The physico chemical parameters of the oil are as follows:n 20 d:1.4672,d 20 20 :0 9002,IV:111.13,SV:191.43.The results indicate that there are rich nutritional ingredients and active materials in the Semen Armeniacae Amarum which have wide prospects in the fields of health food and pharmaceuticals.
