秦皮抗氧化物的提取及对食用油抗氧化作用的研究 被引量:12

摘要 本文用DPPH法及Na2S2O3-I2滴定法测定了秦皮提取物的抗氧化性。结果表明:秦皮乙醇提取物对DPPH自由基清除活性最强,乙酸乙酯提取物次之,正己烷提取物活性最弱。秦皮95%乙醇粗提物对猪油的抗氧化性最强,其抗氧化作用随提取物浓度增加而逐渐增强。柠檬酸、蛋氨酸、抗坏血酸对其抗氧化性有协同增效作用,特别是抗坏血酸、生育酚与提取物复配,抗氧增效作用更加显著,复合物的抗氧化性优于茶多酚。 Antioxidative activities of extracts of the Bark of Ash were measured by 1,1 - dipheny 1 - 2 - picryhy-drazyl(DPPH) method and Na2S2Q3 - I2titrimetric method. The results show that all the extracts of the Bark of Ash obtained by different solvents have scavenging effects on DPPH radical and the scavenging percent decreases in the order of ethanol solution> ethy1 acetate>n - hexane. 95% ethanol extracts show the highest activities on the antioxidation of lard,and the resistance is strengthened when increasing the usage of extracts. Ascorbic acid, Citric acid,Methionine had synergistic antioxidative activities with ethanol extracts of the Bark of Ash. Especially when Vc, VE were used together with of the Bark of Ask extracts,strong synergistic action was showed. The antioxidative activities of this mixture are higher than that of the tea polyphenel.
