摘要
大量临床营养研究表明,蛋白质营养与一些疾病有着十分密切的联系。随着食品加工技术的发展,通过酶水解食物蛋白可以获得大量的具有特殊营养功能的蛋白酶解物,其不仅可以为患者提供有效的营养辅助治疗,而且来源丰富,成本低,工艺操作方便,利于工业化生产,已在一些特殊人群的营养膳食中得到了应用。
Many research works in medical nutrition have showed the relationships between protein nutrition and disease. With the development of food technology,a large number of enzymatic protein hydrolysates having nutritional function could be found when hydrolyzing the food protein by proper proteinase. These hydrolysates can provide nutritional support to patients. They are also easy to get with abundant resources, lower cost and conveniently to scale up,and have been used in some nutritional diet in particular physiological needs.
