摘要
在玉米乳酸发酵饮料生产工艺中,为了提高发酵剂的菌种活力,对玉米糖化液进行适当的营养补充。通过二次回归正交实验设计(响应曲面法)确定了制备发酵剂的最佳工艺条件为:在11Bx的玉米酶解液中添加西红柿汁5%,37℃培养16h。
In the process of the fermented corn drink,the activity of starter could be improved by adding proper amount of nutritions into corn syrup.Throug h the method of the analysis of responding to curved surface,the optimal process conditions have been decided,which are the addea amount of tomato juice into the syrup(11Bx)is5%,the inoculation amount is2%and the culture conditions are16hours at 37℃.
