富锌豆蛋白中锌结合态含量的研究

Analysis of zinic combined with protein in zinic-enriched soybean protein

富锌豆蛋白是一种用特殊科学方法得到的高含量锌添加剂。本文利用植物生化分离和分析方法,研究了富锌豆蛋白中锌与不同蛋白结合状态下的含量。分析结果显示,游离锌为150.7μg/g,结合于蛋白中的锌为1055.0μg/g。可以认为锌主要以有机蛋白锌的形式存在。

Zinc -enriched protein meal obtained by a special scientific method is an additive containing hig h concentration of zinc.The paper studies the zinc in different state of combination with proteins in zinc -enriched soybean meal by biochemical separation and analysis.The result shows the content of free zinc is150.7μg /g(soybean meal),the content of zinc combined with proteins is1055.0μg /g (soybean meal).So,it's concluded that zinc exists mainly in combined form with different kinds of proteins in the soybeam meal.
