摘要
20 0 0年对淮北市区内经营面积 30m2 以上的餐饮业餐具消毒状况进行了抽查 ,结果表明 ,餐饮业的规模以及季节的不同是影响餐饮业餐具消毒效果的主要因素 ,提示应加强对经营者的卫生知识培训 ,加大对餐具消毒的监督力度 ,使餐饮业自觉进行餐具消毒 ,直正提高餐具的卫生水平。
In 2000.A survey on disinfection condition of table wares of the restaurants with operation room over 30 m 2 was carried out by randomly sampling procedure from the urban district in Huai Bei.As a result,it indicated that different salles and seasons were the main influence fattors on disinfectant effect of tableware of the restaurants.In opder to make the proprietor disinfect tableware voluntarily and increase hygiene level really,we should enhance the proprietor's hygiene knowledge,attach importance to disinfection of table ware and strengthen supervision.
