摘要
介绍了三维图像处理技术及其发展现状。对利用CT扫描仪、激光扫描共焦显微镜、微切片图像处理系统、电子显微镜以及原子间力显微镜等构筑原始图像三维图像信息的特点及其在食品组织学、食品定量形态学等领域的应用进行了探讨。
Current development on 3-dimentional image processing technology is introduced. Characteristics of various instruments for the capturing of the original image is described e.g. Computed Tomography(CT),Laser Scanning Confocal Microscopy(LSCM),Micro slicing Image Processing System(MIPS),Scanning Electronic Microscopy(SEM)and Atomic Force Microscopy (AFM).The application of 3-D image processing system in the study of food histology,quantitative morphology is discussed.
