摘要
研究了高压电场催陈广东玉冰烧米酒的效果。研究发现当肉酒比为 1:6 ,40kV/m的场强下处理180min可获得优于传统方法的口感效果。文章对电场处理前后酒中的主要化学指标及微量成分含量进行了检测 ,对铁、钙。
This paper studied the effect of high voltage electric field(HVEF)on accelerating aging rice wine.Results show that:when the ratio of soaked fat to wine is 1:6,treatment electric field 40 kV/m and treatment time 180 min,the best aging effect can be got.The contents of the main indigredients of the samples were examined and the variation of some metal element and protein were analyzed in ghe paper.
