翡翠贻贝肉酶解动物蛋白营养评价及其生理活性初探 被引量:22

摘要 对翡翠贻贝肉酶解动物蛋白 (enzymolyticanimalprotein ,EAP)进行的营养特性研究表明 :粗蛋白含量达72 .8% (干基 ) ,蛋白营养价高 ,氨基酸价为 93(第一限制氨基酸为含硫氨基酸 ) ;且富含赖氨酸、精氨酸、维生素、矿物质等 ;Glu、Asp、Gly等呈味物质含量丰富 ,是制作营养保健食品或海鲜调味料的理想原料。经动物实验表明 :翡翠贻贝肉EAP剂量为 32 0mg·kg-1体重时 ,对昆明小鼠移植性肿瘤S - 180的抑瘤率可达 5 0 .6 % 。 Nutritional characteristics of Perna viridis EAP (enzymolytic animal protein) were studied in this paper. The experimental results indicate that the content of crude protein is 72.8% (dry basis),its nutritional value is as high as the level suggested by FAO/WHO in 1973 as the amino acid score and the first limiting amino acid being 93 and sulfur containing amino acid (Met and Cys), respectively. In addition, it is also rich in lysine,arginine,vitamin,mineral. As it contains some tasty substances such as glutamic acid, aspartic acid, and glycine in high content, it can be processed to an ideal seafood seasoning or healthy food. The findings in anti tumor test indicated that the inhibition rate on Sarcoma 180 was 50.6% when the dosage of Perna viridis EAP used was 320 mg·kg -1 , and the weight of spleen (immunity organ) in mice was increased obviously.
