根据我国民间传统的食疗验方———银耳红枣汤 ,研究了银耳红枣保健饮料的工艺参数。结果表明 ,银耳与红枣的最佳配比为 4∶1;复合稳定剂 (CMC∶海藻酸钠 =1∶1)的稳定效果比单一稳定剂琼脂好 ,其最佳用量为 0 2 % ,产品适宜的糖度和酸度分别为 14 %和 0 1%
The technological parameters for Tremella fuciformis and Chinese red date health drink were determined on the basis of a food-rehabilitation recipe in traditional Chinese medicine. It was shown that the optimum ratio of Tremella fuciformis to Chinese red date was 4∶1, that the complex stabilizer (CMC : sodium alginate =1∶1), the optimal proportion of which was 0 2%, worked better than the single agar, and that 14% sugar and 0 1% acid were appropriate.
