摘要
目的 探讨农村聚餐餐具的卫生学状况,为农村餐饮业卫生管理提供依据。方法 在不同季节对某村23家聚餐时所用的餐具按不同餐次及餐具的自然设置随机抽取1553件,取餐具5×5cm^2面积以无菌棉拭子涂抹采集标本,送实验室做细菌培养和鉴定;对厨师、帮厨人员及就餐人群做现场流行病学调查。结果 餐具平均检出菌落数4823个/cm^2(中位数),大肠杆菌检出率为62.65%;不同季节、不同餐次均有显著性差异;厨师、帮厨人员的致病菌感染率为1O.35%,就餐人群的致病菌感染率为7.67%。结论 农村聚餐时所用餐具的卫生状况较差,易造成胃肠道传染病的流行,应加强此类餐具的卫生管理及农村饮食卫生的健康教育。
OBJECTIVE To explore the hygienic situation of tableware in the country and to provide a basis for hygienic management there. METHODS 1 553 samples were drawn out at random in different seasons from 23 families in the country according to different meals and natural arrangement of tableware. Took the area of 5×5cm2 in the dinner set and smeared over the collected samples with desinfection cotton and sent them to the laboratory to cultivate bacterium and make identification,at the same time made epidemic investigation to the crowd having the meal. RESULTS That the hygienic situation of tableware set is poor, the average number of mushroom of every person is 4 823/cm2 (medium); the percentage of tableware contaminated by coli bacillus is 62.65% ; different season and meal has dramatical significance. The percentage of pathogenic bacterium in workers and dinner is 10.35% and 7.67% . CONCLUSION The hygienic situation of tableware is poor and they easily lead to the widespread of stomach and intestines disease.The hygienic management of tableware should be strengthened.
