摘要
以甘肃3个产地兰州大接杏为材料,进行基本成分、氨基酸及矿质元素分析。结果表明:水分含量在90.1%~91.6%之间,灰分含量在 0.46%~0.89%之间,蛋白质含量在1.22%~1.73%之间,脂肪含量为0刀5%~0刀8%。维生素C的含量在109.3~215.9 mg/kg之间,胡萝卜素的含量在19.0~36.8 mg/kg之间,含酸量为 0.75%~1.23%,含糖量为 2.96%~4.98%。!8种氨基酸在杏中都含有,必需氨基酸以缬氨酸、苯丙氨酸和亮氨酸含量较高;非必需氨基酸以天门冬氨酸,谷氨酸和脯氨酸含量高。矿质元素以钾含量最高,磷、铁、锌、镁、钙等主要元素都可测出。不同产地杏的成分在含量上存在一定程度差异。
The composition of Lanzhou apricots produced in three main areas of Gansu was analyzed.The results showed that nutrient composition of apricots mainly includes 90. 1%-91.6 %moisture, 0.46 %-0.89 % ash, 1.22 %-1.73 % protein, 109.3-215.9 mg/kg Vc, 2.96 %-4.98 % total sugar, 0.75 %-1.23 % total acid and 0.05 %-0.08 % fat. 18 kinds of amino acid can be measured in apricot, Asp,Glu and Pro showed higher content among indispensable amino acids.Val,Phe and Leu content were higher among dispensable amino acids.K content was the highest in apricot.P, C4 Fe, Mg and Zn can be also measured.There was a certain degree difference in the composition of apricot in three main areas.
