摘要
研究了雷竹笋采后在常温 (2 5℃ )贮藏期间的相对含水量、粗蛋白质含量、过氧化物酶 (POD)活性、苯丙氨酸解氨酶 (PAL)活性、木质素含量的相互关系和变化规律 ,结果表明 ,相对含水量和蛋白质含量呈下降趋势 ,POD、PAL等酶活性呈先上升后下降趋势 ,木质素含量不断增加。POD。
The changes of relative water,protein and lignin contents and activities of POD and PAL were investigated in bamboo shoot of Phyllostachys pracecox f.preveynalis preserved at 25℃.Results showed that relative water and protein contentsdeclined and activities of POD & PAL increased initially,declined later,while lignin content continuously increased.There were close correlations between the increase of POD and PAL activities and the increase of lignin content.
